Ingredients
- 2 lbs grass-fed sirloin steaks
- 2 avocados, diced
- 2 cups cherry tomatoes, halved
- 1 English cucumber, diced
- 2 cups fresh cilantro, roughly chopped
- 3 tbsp light vinaigrette dressing
- 1 tbsp neutral oil (for searing)
- Salt and pepper to taste
Instructions
- Pat steaks dry and season generously with salt and pepper on both sides.
- Heat a cast iron or oven-safe skillet over high heat with 1 tbsp oil until smoking. Sear steaks 2 minutes per side until a deep brown crust forms.
- Transfer skillet to a 400°F (200°C) oven and cook for 5 minutes for medium-rare doneness.
- Remove steaks from oven and let rest on a cutting board for 5 minutes.
- While the steak cooks and rests, dice the cucumber, halve the cherry tomatoes, dice the avocados, and roughly chop the cilantro. Add everything to a large bowl.
- Slice rested steak against the grain into bite-sized pieces and add to the bowl.
- Drizzle with light vinaigrette, toss gently to combine, and serve immediately.
