Seared Sirloin Steak & Avocado Salad Bowl by Itsisabelmarie

Quick seared sirloin sliced over a fresh cucumber, tomato, and avocado salad.

Ingredients

  • 2 lbs grass-fed sirloin steaks
  • 2 avocados, diced
  • 2 cups cherry tomatoes, halved
  • 1 English cucumber, diced
  • 2 cups fresh cilantro, roughly chopped
  • 3 tbsp light vinaigrette dressing
  • 1 tbsp neutral oil (for searing)
  • Salt and pepper to taste

Instructions

  1. Pat steaks dry and season generously with salt and pepper on both sides.
  2. Heat a cast iron or oven-safe skillet over high heat with 1 tbsp oil until smoking. Sear steaks 2 minutes per side until a deep brown crust forms.
  3. Transfer skillet to a 400°F (200°C) oven and cook for 5 minutes for medium-rare doneness.
  4. Remove steaks from oven and let rest on a cutting board for 5 minutes.
  5. While the steak cooks and rests, dice the cucumber, halve the cherry tomatoes, dice the avocados, and roughly chop the cilantro. Add everything to a large bowl.
  6. Slice rested steak against the grain into bite-sized pieces and add to the bowl.
  7. Drizzle with light vinaigrette, toss gently to combine, and serve immediately.
