Smoky Skillet Tacos de Alambre by Isabeleats

Seared steak, chorizo, and bacon sautéed with bell peppers and onions, topped with melted oaxaca cheese.

Ingredients
- 4 slices bacon, chopped
- 8 oz chorizo, casing removed
- 1 lb steak, thinly sliced
- 1 large white onion, sliced
- 2 large bell peppers, sliced
- 1.5 cup oaxaca or mozzarella cheese, shredded
- 8-10 corn tortillas, warmed
- 1 tbsp vegetable oil
Instructions
- Heat a large skillet over medium-high heat and add the bacon. Cook until crispy, about 5 minutes.
- Add the chorizo to the skillet and cook, breaking it up with a spoon, until browned, about 5 minutes.
- Push the meats to the side and add the thinly sliced steak. Sear until browned and cooked through, about 4-6 minutes.
- Add the sliced onion and bell peppers to the skillet. Sauté until tender-crisp, about 5 minutes.
- Stir all ingredients together in the skillet until well combined.
- Top the mixture with shredded cheese, cover the skillet, and cook for 2 minutes until the cheese is melted.
- Serve the skillet family-style with warm tortillas on the side.
