Smoky Skillet Tacos de Alambre by Isabeleats

Seared steak, chorizo, and bacon sautéed with bell peppers and onions, topped with melted oaxaca cheese.

Ingredients

  • 4 slices bacon, chopped
  • 8 oz chorizo, casing removed
  • 1 lb steak, thinly sliced
  • 1 large white onion, sliced
  • 2 large bell peppers, sliced
  • 1.5 cup oaxaca or mozzarella cheese, shredded
  • 8-10 corn tortillas, warmed
  • 1 tbsp vegetable oil

Instructions

  1. Heat a large skillet over medium-high heat and add the bacon. Cook until crispy, about 5 minutes.
  2. Add the chorizo to the skillet and cook, breaking it up with a spoon, until browned, about 5 minutes.
  3. Push the meats to the side and add the thinly sliced steak. Sear until browned and cooked through, about 4-6 minutes.
  4. Add the sliced onion and bell peppers to the skillet. Sauté until tender-crisp, about 5 minutes.
  5. Stir all ingredients together in the skillet until well combined.
  6. Top the mixture with shredded cheese, cover the skillet, and cook for 2 minutes until the cheese is melted.
  7. Serve the skillet family-style with warm tortillas on the side.
