- 2 cup dill pickles, diced
- 1 cup cucumber, diced
- 1 cup tomatoes, seeded and diced
- 0.5 cup red onion, finely diced
- 0.5 cup bell pepper, diced
- 0.25 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 0.25 cup pickle brine
- 2 tbsp lime juice
Instructions
- Prepare all vegetables by dicing the pickles, cucumber, tomatoes, onion, and bell pepper into uniform, bite-sized pieces.
- Combine the diced pickles, cucumber, tomatoes, onion, bell pepper, and cilantro in a large mixing bowl.
- Add the minced garlic, pickle brine, and fresh lime juice to the mixture.
- Toss everything together gently until well combined, ensuring the brine coats all ingredients.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
