Ingredients

  • 2 cup dill pickles, diced

  • 1 cup tomatoes, seeded and diced
  • 0.5 cup red onion, finely diced
  • 0.5 cup bell pepper, diced
  • 0.25 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 0.25 cup pickle brine
  • 2 tbsp lime juice

Instructions

  1. Prepare all vegetables by dicing the pickles, cucumber, tomatoes, onion, and bell pepper into uniform, bite-sized pieces.
  2. Combine the diced pickles, cucumber, tomatoes, onion, bell pepper, and cilantro in a large mixing bowl.
  3. Add the minced garlic, pickle brine, and fresh lime juice to the mixture.
