S'mores Chocolate Chip Cookies by Iramsfoodstory
Indulgent, chewy chocolate chip cookies stuffed with a gooey marshmallow and graham cracker s'mores center.

Ingredients
- 113 g salted butter, melted
- 67 g granulated sugar
- 100 g dark brown sugar
- 15 g vanilla bean paste
- 0.5 tsp espresso powder
- 156 g all-purpose flour
- 0.5 tsp baking soda
- 1 egg, room temperature
- 170 g semi-sweet chocolate chips
- 85 g mini chocolate rectangles
- 8 large marshmallows
- 8 square graham crackers
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk melted butter, granulated sugar, and brown sugar for 2-3 minutes until well combined.
- Add the egg and whisk for another 1-2 minutes until smooth, then stir in the vanilla bean paste.
- In a separate bowl, whisk together the flour, baking soda, and espresso powder
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Fold in the semi-sweet chocolate chips until just incorporated.
- On the prepared sheet, place 8 graham cracker squares, top each with a chocolate rectangle, and add a marshmallow on top.
- Scoop a portion of cookie dough, flatten slightly, and place it over the marshmallow, sealing the edges to cover it completely.
- Space cookies 2-3 inches apart and bake for 12-13 minutes until edges are golden and crispy.
- Let cool completely for 25-30 minutes before serving to allow the marshmallow to set.
