Ingredients

  • 3 large ripe bananas
  • 1.5 cup all-purpose flour
  • 0.33 cup unsweetened cocoa powder
  • 3 tbsp neutral oil
  • 3 tbsp unsalted butter, melted
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar
  • 2 eggs
  • 0.5 tsp baking soda
  • 2 tsp baking powder
  • 0.75 tsp salt
  • 2 tbsp maple syrup
  • 1 tbsp vanilla extract
  • 0.25 cup sour cream
  • 1 tsp espresso powder
  • 1 cup semi-sweet chocolate chips
  • 0.75 cup fresh strawberries, diced

Instructions

  1. Mash peeled bananas in a large bowl until smooth.
  2. Whisk in eggs for 1-2 minutes until well combined.
  3. Stir in oil, melted butter, sugars, vanilla, sour cream, and maple syrup.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cocoa powder, and espresso powder
  5. Gently fold dry ingredients into the wet mixture, stopping when partially combined
  6. Fold in chocolate chips and diced strawberries; do not overmix
  7. Let the batter rest at room temperature for 30 minutes.
  8. Preheat oven to 425°F and line a muffin tin.
  9. Distribute batter into liners and top with extra chips and strawberries if desired.
  10. Bake at 425°F for 5 minutes, then reduce heat to 375°F (without opening the oven) and bake for 15 minutes more or until a toothpick comes out clean.
