Ingredients
- 3 large ripe bananas
- 1.5 cup all-purpose flour
- 0.33 cup unsweetened cocoa powder
- 3 tbsp neutral oil
- 3 tbsp unsalted butter, melted
- 0.5 cup granulated sugar
- 0.5 cup brown sugar
- 2 eggs
- 0.5 tsp baking soda
- 2 tsp baking powder
- 0.75 tsp salt
- 2 tbsp maple syrup
- 1 tbsp vanilla extract
- 0.25 cup sour cream
- 1 tsp espresso powder
- 1 cup semi-sweet chocolate chips
- 0.75 cup fresh strawberries, diced
Instructions
- Mash peeled bananas in a large bowl until smooth.
- Whisk in eggs for 1-2 minutes until well combined.
- Stir in oil, melted butter, sugars, vanilla, sour cream, and maple syrup.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, cocoa powder, and espresso powder
- Gently fold dry ingredients into the wet mixture, stopping when partially combined
- Fold in chocolate chips and diced strawberries; do not overmix
- Let the batter rest at room temperature for 30 minutes.
- Preheat oven to 425°F and line a muffin tin.
- Distribute batter into liners and top with extra chips and strawberries if desired.
- Bake at 425°F for 5 minutes, then reduce heat to 375°F (without opening the oven) and bake for 15 minutes more or until a toothpick comes out clean.
