Ingredients

  • 1 chicken breast, halved lengthwise and pounded
  • 1 tbsp garlic powder
  • 1 tsp black pepper
  • 1 tbsp smoked paprika powder
  • 2 cups panko bread crumbs
  • 1 egg
  • 1/2 cup water
  • 1 cup all purpose flour
  • 1/2 cup mayonnaise
  • 2 cloves fresh garlic, minced
  • 1 tbsp worcestershire sauce
  • 1 tbsp dijon mustard
  • 2 tsp lemon juice
  • 1/3 cup freshly grated parmesan cheese
  • 1 tsp fresh ground black pepper
  • 2 tbsp extra virgin olive oil
  • 2 cups lettuce, washed and chopped
  • 3 mini loafs of bread
  • 3 tbsp butter
  • 1/2 tsp (adjust to taste) salt

Instructions

  1. Pat dry the chicken and season with salt, pepper, garlic powder, and smoked paprika powder.
  2. Prepare the egg wash by whisking 1 egg with 1/2 cup water in a bowl.
  3. Prepare the dry batter by mixing 1 cup all-purpose flour with salt, 1 tsp garlic powder, and 1 tsp black pepper in a bowl.
  4. Place 2 cups of panko bread crumbs in a separate bowl.
  5. Coat the seasoned chicken first in the dry batter, then dip in the egg wash, then coat again in dry batter, then egg wash.
  6. Finally, coat the chicken thoroughly with panko bread crumbs, repeating until all chicken fillets are coated.
  7. Heat frying oil in a pan to 350°F (175°C).
  8. Carefully add the coated chicken to the hot oil and fry for 4-5 minutes per side, or until the internal temperature reaches 165°F (74°C).
  9. Make the Caesar dressing by combining 1/2 cup mayonnaise, 2 cloves minced garlic, 1 tbsp Worcestershire sauce, 1 tbsp Dijon mustard, 2 tsp lemon juice, 1/3 cup grated Parmesan cheese, 1 tsp black pepper, and 2 tbsp olive oil. Mix well
  10. Reserve 1/2 of the Caesar dressing for later use.
  11. Add 2 cups of chopped lettuce to the remaining dressing and mix to combine
  12. Butter the mini loafs of bread and toast them until crisp and golden brown.
  13. Spread some of the reserved Caesar dressing on one side of the toasted bread.
  14. Place the fried chicken on the bread.
  15. Top the chicken with the Caesar salad mixture.
  16. Garnish with freshly grated Parmesan cheese.
  17. Close the sandwich and serve warm.
