Ingredients

  • 225 g unsalted butter
  • 60 g natural cocoa powder
  • 1 tbsp vanilla bean paste or vanilla extract
  • 115 g light brown sugar
  • 1.75 cup powdered sugar
  • 120 g semi-sweet chocolate chips
  • 60 g semi-sweet chocolate, chopped
  • 3 large eggs, room temperature
  • 65 g all-purpose flour
  • 0.5 tsp salt
  • 1 tsp espresso powder
  • 3 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch pan with parchment paper.
  2. Brown the butter in a saucepan over medium-low heat for 6-8 minutes until nutty and golden; transfer to a bowl to cool.
  3. Stir cocoa powder, oil, vanilla, and chopped chocolate into the cooled browned butter until melted and smooth.
  4. In a separate bowl, whisk eggs and light brown sugar for 5-6 minutes until the sugar is completely dissolved.
  5. Add powdered sugar to the egg mixture and whisk for an additional 1-2 minutes.
  6. Combine the browned butter mixture with the egg mixture, then stir in flour and chocolate chips until just incorporated.
  7. Pour batter into the prepared pan and bake for 30-35 minutes until the top is shiny and a toothpick comes out with moist crumbs.
  8. Cool in the pan for 1-2 hours before slicing with a warmed, sharp knife.
