Ingredients
- 225 g unsalted butter
- 60 g natural cocoa powder
- 1 tbsp vanilla bean paste or vanilla extract
- 115 g light brown sugar
- 1.75 cup powdered sugar
- 120 g semi-sweet chocolate chips
- 60 g semi-sweet chocolate, chopped
- 3 large eggs, room temperature
- 65 g all-purpose flour
- 0.5 tsp salt
- 1 tsp espresso powder
- 3 tbsp olive oil
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch pan with parchment paper.
- Brown the butter in a saucepan over medium-low heat for 6-8 minutes until nutty and golden; transfer to a bowl to cool.
- Stir cocoa powder, oil, vanilla, and chopped chocolate into the cooled browned butter until melted and smooth.
- In a separate bowl, whisk eggs and light brown sugar for 5-6 minutes until the sugar is completely dissolved.
- Add powdered sugar to the egg mixture and whisk for an additional 1-2 minutes.
- Combine the browned butter mixture with the egg mixture, then stir in flour and chocolate chips until just incorporated.
- Pour batter into the prepared pan and bake for 30-35 minutes until the top is shiny and a toothpick comes out with moist crumbs.
- Cool in the pan for 1-2 hours before slicing with a warmed, sharp knife.
