Caramelized Onion Pasta by Iramsfoodstory
Rich, savory pasta tossed in a creamy caramelized onion sauce with a hint of chili heat.

Ingredients
- 280g (10 oz) pasta (spaghetti, fettuccine, or rigatoni)
- 2 large yellow onions, thinly sliced
- 1/2 cup parmesan cheese, freshly grated
- 1 cup heavy whipping cream
- 6 cloves fresh garlic, minced
- 2 tbsp butter
- 2 tbsp oil
- 1 tbsp chili oil
- 1/4 cup chicken stock
- 1 tsp soy sauce
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped
- 1 tsp lemon juice
- 1/2 tsp salt (adjust to taste)
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente, reserving 1/2 cup of pasta water before draining.
- Heat butter and oil in a large pan over medium-low heat.
- Add sliced onions and a pinch of salt, cooking slowly for 20-25 minutes, stirring occasionally until deep golden brown.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add chili oil, then pour in chicken stock, scraping the bottom of the pan to release browned bits.
- Pour in heavy cream and soy sauce, season with black pepper, and simmer gently for 3-4 minutes until slightly thickened.
- Add cooked pasta to the pan and toss well to coat, adding reserved pasta water if the sauce is too thick
- Stir in Parmesan cheese until melted and creamy, then finish with lemon juice and parsley before serving.
