Rich, savory pasta tossed in a creamy caramelized onion sauce with a hint of chili heat.

Ingredients

  • 280g (10 oz) pasta (spaghetti, fettuccine, or rigatoni)
  • 2 large yellow onions, thinly sliced
  • 1/2 cup parmesan cheese, freshly grated
  • 1 cup heavy whipping cream
  • 6 cloves fresh garlic, minced
  • 2 tbsp butter
  • 2 tbsp oil
  • 1 tbsp chili oil
  • 1/4 cup chicken stock
  • 1 tsp soy sauce
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon juice
  • 1/2 tsp salt (adjust to taste)

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente, reserving 1/2 cup of pasta water before draining.
  2. Heat butter and oil in a large pan over medium-low heat.
  3. Add sliced onions and a pinch of salt, cooking slowly for 20-25 minutes, stirring occasionally until deep golden brown.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Add chili oil, then pour in chicken stock, scraping the bottom of the pan to release browned bits.
  6. Pour in heavy cream and soy sauce, season with black pepper, and simmer gently for 3-4 minutes until slightly thickened.
  7. Add cooked pasta to the pan and toss well to coat, adding reserved pasta water if the sauce is too thick
  8. Stir in Parmesan cheese until melted and creamy, then finish with lemon juice and parsley before serving.
