Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/2 tsp salt, divided
  • 1/2 tsp coriander powder, divided
  • 2 tsp red chili powder, divided
  • 1/2 tsp cumin powder
  • 2 tsp smoked paprika powder, divided
  • 1/2 tsp turmeric powder, divided
  • 1/2 tsp black pepper, divided
  • 2 tsp garam masala, divided
  • 2 tbsp whole milk greek yogurt
  • 1 tbsp oil, plus more for cooking
  • 1/2 lemon, juiced
  • 1 cup finely chopped onion
  • 2 tbsp tomato paste
  • 1 tsp ginger garlic paste
  • 1/2 tsp sugar
  • 1 cup unsweetened heavy whipping cream
  • 1 tbsp chopped parsley, divided
  • 1 tbsp butter
  • 1/2 cup unsalted butter, softened
  • 3-4 garlic cloves, finely minced
  • 1 cup mozzarella cheese, shredded
  • 1 loaf bread, halved lengthwise

Instructions

  1. In a medium bowl, combine chicken with 1/2 tsp salt, 1/2 tsp coriander, 1 tsp red chili powder, 1/2 tsp cumin, 1 tsp smoked paprika, 1/2 tsp turmeric, 1/2 tsp black pepper, 1 tsp garam masala, yogurt, 1 tbsp oil, and lemon juice. Mix thoroughly, cover, and marinate for at least 30 minutes.
  2. Heat some oil in a skillet over medium heat. Add marinated chicken and cook for 6-8 minutes, turning occasionally, until fully cooked. Remove chicken, slice, and set aside.
  3. In the same skillet, add a little oil if needed. Sauté chopped onions over medium heat until soft and lightly golden, about 5-7 minutes.
  4. Stir in ginger garlic paste and cook for 30 seconds
  5. Add tomato paste and cook for 1-2 minutes.
  6. Mix in 1/2 tsp salt, 1/2 tsp coriander, 1 tsp red chili powder, 1 tsp smoked paprika, 1/2 tsp turmeric, 1/2 tsp black pepper, and 1 tsp garam masala. Cook for another minute
  7. Pour in heavy cream and stir until smooth. Simmer gently for 6-7 minutes until thickened. Stir in 1 tbsp butter until melted. This is your butter chicken sauce.
  8. In a separate bowl, mix softened butter with minced garlic, 1 tbsp parsley, and a pinch of salt for the garlic butter.
  9. Preheat oven to 400°F (200°C).
  10. Spread garlic butter evenly over the halved bread.
  11. Spoon the butter chicken sauce mixture over the garlic butter on the bread.
  12. Sprinkle mozzarella cheese and sliced chicken pieces on top.
  13. Add a little more butter chicken sauce on top of the cheese and chicken.
  14. Bake for 12-15 minutes, or until the cheese is melted and the bread is crispy.
  15. Slice and serve immediately.
