Butter Chicken Garlic Bread by Iramsfoodstory

Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 1/2 tsp salt, divided
- 1/2 tsp coriander powder, divided
- 2 tsp red chili powder, divided
- 1/2 tsp cumin powder
- 2 tsp smoked paprika powder, divided
- 1/2 tsp turmeric powder, divided
- 1/2 tsp black pepper, divided
- 2 tsp garam masala, divided
- 2 tbsp whole milk greek yogurt
- 1 tbsp oil, plus more for cooking
- 1/2 lemon, juiced
- 1 cup finely chopped onion
- 2 tbsp tomato paste
- 1 tsp ginger garlic paste
- 1/2 tsp sugar
- 1 cup unsweetened heavy whipping cream
- 1 tbsp chopped parsley, divided
- 1 tbsp butter
- 1/2 cup unsalted butter, softened
- 3-4 garlic cloves, finely minced
- 1 cup mozzarella cheese, shredded
- 1 loaf bread, halved lengthwise
Instructions
- In a medium bowl, combine chicken with 1/2 tsp salt, 1/2 tsp coriander, 1 tsp red chili powder, 1/2 tsp cumin, 1 tsp smoked paprika, 1/2 tsp turmeric, 1/2 tsp black pepper, 1 tsp garam masala, yogurt, 1 tbsp oil, and lemon juice. Mix thoroughly, cover, and marinate for at least 30 minutes.
- Heat some oil in a skillet over medium heat. Add marinated chicken and cook for 6-8 minutes, turning occasionally, until fully cooked. Remove chicken, slice, and set aside.
- In the same skillet, add a little oil if needed. Sauté chopped onions over medium heat until soft and lightly golden, about 5-7 minutes.
- Stir in ginger garlic paste and cook for 30 seconds
- Add tomato paste and cook for 1-2 minutes.
- Mix in 1/2 tsp salt, 1/2 tsp coriander, 1 tsp red chili powder, 1 tsp smoked paprika, 1/2 tsp turmeric, 1/2 tsp black pepper, and 1 tsp garam masala. Cook for another minute
- Pour in heavy cream and stir until smooth. Simmer gently for 6-7 minutes until thickened. Stir in 1 tbsp butter until melted. This is your butter chicken sauce.
- In a separate bowl, mix softened butter with minced garlic, 1 tbsp parsley, and a pinch of salt for the garlic butter.
- Preheat oven to 400°F (200°C).
- Spread garlic butter evenly over the halved bread.
- Spoon the butter chicken sauce mixture over the garlic butter on the bread.
- Sprinkle mozzarella cheese and sliced chicken pieces on top.
- Add a little more butter chicken sauce on top of the cheese and chicken.
- Bake for 12-15 minutes, or until the cheese is melted and the bread is crispy.
- Slice and serve immediately.
