Sweet Potato Beef Bowl with medium sweet potatoes tbsp olive oil and tsp kosher salt and a balanced finish.

Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp cornstarch
- 800 g ground beef
- 2 tbsp paprika
- 2 tbsp cumin
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tsp salt
- 1 tsp black pepper
- 3 tomatoes, diced
- 1/4 cucumber, diced
- 1/4 red onion, finely chopped
- 1 avocado, diced
- 400 g cottage cheese
- 2 dl honey
- 2 tsp white wine vinegar
- 1 tsp chili flakes
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat the oven to 225°C and line a baking tray with parchment.
- Toss the diced sweet potatoes with olive oil, salt, pepper, and cornstarch until lightly coated, then spread them out in a single layer.
- Roast for 25-30 minutes, flipping once halfway through, until crispy and browned at the edges.
- Heat a large skillet over high heat and sear the ground beef for 6-8 minutes, breaking it up as it browns.
- Stir in the paprika, cumin, garlic powder, onion powder, salt, and pepper, then cook for 1 minute until fragrant and well coated.
- Mix the tomatoes, cucumber, red onion, and avocado in a bowl to make the salsa.
- Warm the honey in a small saucepan over medium heat for 2-3 minutes, then remove from heat and stir in the vinegar, chili flakes, salt, and pepper.
- Assemble the bowls with roasted sweet potatoes, spiced beef, salsa, and cottage cheese, then drizzle lightly with hot honey.
