Sweet Potato Beef Bowl by Inspomajk

Sweet Potato Beef Bowl with medium sweet potatoes tbsp olive oil and tsp kosher salt and a balanced finish.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp cornstarch
  • 800 g ground beef
  • 2 tbsp paprika
  • 2 tbsp cumin
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 3 tomatoes, diced
  • 1/4 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1 avocado, diced
  • 400 g cottage cheese
  • 2 dl honey
  • 2 tsp white wine vinegar
  • 1 tsp chili flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat the oven to 225°C and line a baking tray with parchment.
  2. Toss the diced sweet potatoes with olive oil, salt, pepper, and cornstarch until lightly coated, then spread them out in a single layer.
  3. Roast for 25-30 minutes, flipping once halfway through, until crispy and browned at the edges.
  4. Heat a large skillet over high heat and sear the ground beef for 6-8 minutes, breaking it up as it browns.
  5. Stir in the paprika, cumin, garlic powder, onion powder, salt, and pepper, then cook for 1 minute until fragrant and well coated.
  6. Mix the tomatoes, cucumber, red onion, and avocado in a bowl to make the salsa.
  7. Warm the honey in a small saucepan over medium heat for 2-3 minutes, then remove from heat and stir in the vinegar, chili flakes, salt, and pepper.
  8. Assemble the bowls with roasted sweet potatoes, spiced beef, salsa, and cottage cheese, then drizzle lightly with hot honey.
