Creamy Cajun Sausage Pasta by Iizzyeats

Savory Italian sausage and sun-dried tomatoes tossed in a rich, spiced Cajun cream sauce with pasta.

Ingredients
- 5 links italian sausage
- 250g (8 oz) pasta of choice
- 1/2 red onion, diced
- 3 sun-dried tomatoes, diced
- 2 tbsp minced garlic
- 1 tbsp butter
- 2 tbsp tomato paste
- 160ml (2/3 cup) heavy whipping cream
- 1/4 cup chicken or veggie broth (as needed)
- 1/2 cup shredded cheese (parmesan or mozzarella)
- 1 tsp cajun seasoning (adjust to taste)
- 1/2 tsp each black pepper, garlic powder, onion powder
Instructions
- Boil a large pot of salted water and cook pasta according to package instructions until al dente, then drain.
- Brown the Italian sausage in a large skillet over medium-high heat for 6-8 minutes until fully cooked; remove and set aside.
- Add butter to the same skillet, then sauté the diced red onion for 3-4 minutes until translucent.
- Stir in the minced garlic and sun-dried tomatoes, cooking for 1 minute until fragrant.
- Add the tomato paste and cook for 2 minutes, stirring constantly to deepen the flavor.
- Pour in the heavy cream and broth, whisking to combine, and simmer for 3-5 minutes until the sauce slightly thickens.
- Season the sauce with Cajun seasoning, black pepper, garlic powder, and onion powder.
- Return the cooked sausage to the pan, stir in the cheese until melted, and toss with the cooked pasta until well coated.
