Creamy Cajun Sausage Pasta by Iizzyeats

Savory Italian sausage and sun-dried tomatoes tossed in a rich, spiced Cajun cream sauce with pasta.

Ingredients

  • 5 links italian sausage
  • 250g (8 oz) pasta of choice
  • 1/2 red onion, diced
  • 3 sun-dried tomatoes, diced
  • 2 tbsp minced garlic
  • 1 tbsp butter
  • 2 tbsp tomato paste
  • 160ml (2/3 cup) heavy whipping cream
  • 1/4 cup chicken or veggie broth (as needed)
  • 1/2 cup shredded cheese (parmesan or mozzarella)
  • 1 tsp cajun seasoning (adjust to taste)
  • 1/2 tsp each black pepper, garlic powder, onion powder

Instructions

  1. Boil a large pot of salted water and cook pasta according to package instructions until al dente, then drain.
  2. Brown the Italian sausage in a large skillet over medium-high heat for 6-8 minutes until fully cooked; remove and set aside.
  3. Add butter to the same skillet, then sauté the diced red onion for 3-4 minutes until translucent.
  4. Stir in the minced garlic and sun-dried tomatoes, cooking for 1 minute until fragrant.
  5. Add the tomato paste and cook for 2 minutes, stirring constantly to deepen the flavor.
  6. Pour in the heavy cream and broth, whisking to combine, and simmer for 3-5 minutes until the sauce slightly thickens.
  7. Season the sauce with Cajun seasoning, black pepper, garlic powder, and onion powder.
  8. Return the cooked sausage to the pan, stir in the cheese until melted, and toss with the cooked pasta until well coated.
