Chorizo and Sweet Potato Power Bowl by Iizzyeats

Savory chorizo and crispy air-fried sweet potatoes served with fresh guacamole and zesty lime sauce.

Ingredients
- 340g (12 oz) chorizo, ground or crumbled
- 2 large sweet potatoes, peeled and diced into 1/2 inch cubes
- 2 tbsp olive oil
- 2 ripe avocados
- 1/4 cup red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 1 lime, juiced
- 1/2 cup greek yogurt or sour cream (for sauce base)
- 1 clove garlic, minced
- 1/2 tsp salt, divided
Instructions
- Preheat air fryer to 200°C (400°F). Toss diced sweet potatoes with olive oil and 1/4 tsp salt. Air fry for 15-20 minutes, shaking halfway through, until tender and lightly browned.
- Place chorizo in a large skillet over medium-high heat. Cook for 8-10 minutes, breaking it apart with a spoon, until browned and cooked through.
- Mash avocados in a small bowl with diced red onion, half the cilantro, half the lime juice, and a pinch of salt until desired consistency is reached.
- Whisk together greek yogurt, minced garlic, remaining lime juice, remaining cilantro, and a pinch of salt to create the garlic cilantro lime sauce.
- Assemble bowls by dividing the cooked chorizo and air-fried sweet potatoes into two portions, topping each with a generous scoop of guacamole and a drizzle of the prepared sauce.
