Chicken Parmesan with Vodka Sauce by Iizzyeats

Crispy breaded chicken cutlets smothered in a creamy, tomato-based vodka sauce and melted parmesan cheese.

Ingredients

  • 4 chicken breasts, pounded to 1/2-inch thickness
  • 1 cup panko bread crumbs
  • 1/2 cup parmesan cheese, grated
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 2 cup vodka sauce (store-bought or homemade)
  • 1 cup mozzarella cheese, shredded
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Set up a breading station with three shallow bowls: one with flour, salt, and pepper; one with beaten eggs; and one with a mixture of panko and parmesan.
  3. Dredge each chicken breast in flour, dip into the egg, then coat thoroughly with the breadcrumb mixture.
  4. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown and cooked through.
  5. Place the seared chicken in a baking dish, top each piece with a generous amount of vodka sauce and shredded mozzarella.
  6. Bake for 10-12 minutes until the cheese is bubbly and slightly browned.
