Chili Garlic Noodles by Ian Fujimoto

Spicy, savory noodles tossed with garlicky pork and a tangy chili sauce.

Ingredients

  • 8 oz noodles
  • 1/4 cup neutral oil
  • 3 tbsp chili flakes
  • 2 tbsp soy sauce
  • 1 tbsp black vinegar
  • 1 tbsp sugar
  • 4 garlic cloves, roughly chopped
  • 1/2-inch piece ginger, grated
  • 4 green onions, diced and separated
  • 1/2 lb ground pork
  • 1/2 tsp salt
  • 1 tbsp sesame seeds

Instructions

  1. Cook the noodles according to package directions until just tender, then drain and set aside, about 8 minutes.
  2. Mix the chili sauce in a bowl with chili flakes, soy sauce, black vinegar, sugar, and sesame seeds.
  3. Heat the neutral oil in a large pan over medium-high heat until shimmering, about 1 minute.
  4. Add the garlic, ginger, and the white parts of the green onions; stir for 30-60 seconds until fragrant.
  5. Add the ground pork and salt, then cook for 4-5 minutes, breaking it up, until browned and cooked through.
  6. Pour in the sauce and cook for 1 minute, stirring until glossy and bubbling.
  7. Add the noodles and toss for 1-2 minutes until evenly coated and heated through.
  8. Finish with the green onion tops and serve immediately.
