Chili Garlic Noodles by Ian Fujimoto

Spicy, savory noodles tossed with garlicky pork and a quick chili-vinegar sauce.

Ingredients
- 8 oz noodles
- 1/4 cup neutral oil
- 3 tbsp chili flakes
- 2 tbsp soy sauce
- 1 tbsp black vinegar
- 1 tbsp sugar
- 4 garlic cloves, roughly chopped
- 1/2-inch piece ginger, grated
- 4 green onions, diced and separated
- 1/2 lb ground pork
- 1/2 tsp salt
- 1 tbsp sesame seeds
Instructions
- Cook the noodles in salted boiling water for 6-8 minutes, until just tender, then drain and set aside.
- Heat the neutral oil in a large pan over medium-high heat for 1-2 minutes, until shimmering.
- Add the garlic, ginger, and white parts of the green onions; cook for 30-45 seconds, until fragrant.
- Add the ground pork and salt; cook for 4-5 minutes, breaking it up, until browned and no longer pink.
- Stir in the chili flakes, soy sauce, black vinegar, sugar, and sesame seeds; cook for about 1 minute, until the sauce smells toasted and slightly thickened.
- Add the noodles and toss for 1-2 minutes, until evenly coated and glossy.
- Finish with the green onion tops and serve immediately while hot.
