20 Minute Maximum Flavor Tacos by Ian Fujimoto

Quick and flavorful steak tacos for busy days, ready in under 20 minutes.

Ingredients
- 1 lb pre-marinated steak
- 8 tortillas
- 2 roma tomatoes
- 1 jalapeño
- 3 cloves garlic
- 0.5 white onion
- 0.5 bunch cilantro
- 0.5 lime juice
- 1 tsp salt
- 0.25 cup cotija cheese
- 0.25 cup diced white onion
- 0.25 cup chopped cilantro
Instructions
- Thaw the pre-marinated steak if frozen.
- Dice the tomatoes, jalapeño, garlic, and half of the white onion.
- Finely chop the cilantro.
- Squeeze half a lime for juice.
- Cook the steak according to package directions until done, approximately 5-10 minutes.
- While steak cooks, combine diced tomatoes, jalapeño, garlic, half the onion, cilantro, lime juice, and salt in a bowl to make a salsa.
- Once steak is cooked, let it rest for a minute, then slice it thinly against the grain.
- Warm the tortillas on a skillet or directly over a flame until pliable, about 1-2 minutes per side.
- Assemble the tacos by filling the warm tortillas with sliced steak.
- Top the steak with the prepared salsa, cotija cheese, additional diced white onion, and chopped cilantro.
