15 Minute Pinto Bean Tacos by I Heart Vegetables
Quick and easy crispy cheesy pinto bean tacos that are perfect for taco night.

Ingredients
- 1 can (15 oz) pinto beans, rinsed and drained
- 1/2 cup shredded cheese (cheddar or monterey jack)
- 8 corn or flour tortillas
- 1 tbsp olive oil
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Heat olive oil in a non-stick skillet over medium heat.
- Add rinsed and drained pinto beans to the skillet with chili powder, cumin, salt, and pepper.
- Cook for 3-5 minutes, stirring occasionally, until beans are heated through.
- Mash about half of the beans with a fork or potato masher directly in the skillet to create a creamier texture.
- Stir in the shredded cheese and cook for another 1-2 minutes until melted.
- Warm tortillas according to package directions.
- Spoon the bean and cheese mixture into the warmed tortillas.
- Serve immediately.
