15 Minute Pinto Bean Tacos by I Heart Vegetables

Quick and easy crispy cheesy pinto bean tacos that are perfect for taco night.

Ingredients

  • 1 can (15 oz) pinto beans, rinsed and drained
  • 1/2 cup shredded cheese (cheddar or monterey jack)
  • 8 corn or flour tortillas
  • 1 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add rinsed and drained pinto beans to the skillet with chili powder, cumin, salt, and pepper.
  3. Cook for 3-5 minutes, stirring occasionally, until beans are heated through.
  4. Mash about half of the beans with a fork or potato masher directly in the skillet to create a creamier texture.
  5. Stir in the shredded cheese and cook for another 1-2 minutes until melted.
  6. Warm tortillas according to package directions.
  7. Spoon the bean and cheese mixture into the warmed tortillas.
  8. Serve immediately.
