Gluten-free, dairy-free sugar cookie bars that bake up soft and festive.

Ingredients

  • 2 cups gluten-free all-purpose flour blend
  • 1 tsp baking powder
  • 1/2 tsp fine salt
  • 1/2 cup dairy-free butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp dairy-free milk
  • 1/4 cup sprinkles, optional
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and line an 8x8-inch baking pan with parchment paper.
  2. Whisk the gluten-free flour, baking powder, and salt in a medium bowl until evenly combined.
  3. Beat the dairy-free butter and sugar together for 2 minutes until light and fluffy.
  4. Mix in the egg, vanilla, and dairy-free milk until smooth, then stir in the dry ingredients just until a soft dough forms.
  5. Spread the dough evenly into the pan and top with sprinkles, if using.
  6. Bake for 20 to 22 minutes, until the edges are set and the center looks just barely golden.
  7. Cool completely in the pan for 30 minutes before lifting out and slicing into bars.
  8. Whisk the powdered sugar, dairy-free milk, and vanilla into a smooth glaze, then drizzle over the cooled bars.
