Soft Sugar Cookie Bars by Hopeandhummus
Gluten-free, dairy-free sugar cookie bars that bake up soft and festive.

Ingredients
- 2 cups gluten-free all-purpose flour blend
- 1 tsp baking powder
- 1/2 tsp fine salt
- 1/2 cup dairy-free butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp dairy-free milk
- 1/4 cup sprinkles, optional
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350°F and line an 8x8-inch baking pan with parchment paper.
- Whisk the gluten-free flour, baking powder, and salt in a medium bowl until evenly combined.
- Beat the dairy-free butter and sugar together for 2 minutes until light and fluffy.
- Mix in the egg, vanilla, and dairy-free milk until smooth, then stir in the dry ingredients just until a soft dough forms.
- Spread the dough evenly into the pan and top with sprinkles, if using.
- Bake for 20 to 22 minutes, until the edges are set and the center looks just barely golden.
- Cool completely in the pan for 30 minutes before lifting out and slicing into bars.
- Whisk the powdered sugar, dairy-free milk, and vanilla into a smooth glaze, then drizzle over the cooled bars.
