Fudgy Banana Bread Brownies by Hopeandhummus

Paleo, vegan, gluten-free brownies with deep chocolate flavor and a fudgy banana-rich texture.

Ingredients

  • 2 large ripe bananas (about 1 cup mashed)
  • 1/2 cup almond butter (or cashew butter)
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup cacao powder (unsweetened)
  • 2 tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/3 cup dairy-free chocolate chips (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mash bananas thoroughly in a large bowl until smooth with no large lumps.
  3. Stir in almond butter, maple syrup, and vanilla extract until fully combined.
  4. Add cacao powder, coconut flour, baking soda, and salt; mix until a thick, uniform batter forms.
  5. Fold in chocolate chips, then pour batter into the prepared pan and spread evenly. Scatter extra chocolate chips on top.
  6. Bake for 22–26 minutes until the edges are set and the center looks just barely done — it will firm up as it cools.
  7. Cool in the pan for at least 20 minutes before slicing into 9 squares. For cleanest cuts, refrigerate 30 minutes first.
