Crisp romaine lettuce tossed in a savory, emulsified dressing with parmesan cheese and crunchy croutons.

Ingredients
- 1 head romaine lettuce, chopped
- 1 clove garlic, minced
- 3 olive oil-packed anchovy fillets, mashed
- 1/2 cup parmesan cheese, freshly grated
- 1 cup croutons
- 1/4 cup extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 tsp black pepper
Instructions
- Mash the garlic and anchovy fillets together in a large salad bowl using a fork until a smooth paste forms.
- Whisk in the olive oil and lemon juice until the dressing is emulsified and slightly thickened.
- Add the chopped romaine lettuce to the bowl and toss thoroughly to coat every leaf with the dressing over medium heat until heated through, about 5 min.
- Fold in half of the grated parmesan cheese and all the croutons, tossing gently to combine over medium heat until heated through, about 5 min.
- Serve immediately, topped with the remaining parmesan cheese and fresh cracked pepper until ready to serve.
