Elevated Caesar Salad by Homamino

Crisp romaine lettuce tossed in a savory, emulsified dressing with parmesan cheese and crunchy croutons.

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 clove garlic, minced
  • 3 olive oil-packed anchovy fillets, mashed
  • 1/2 cup parmesan cheese, freshly grated
  • 1 cup croutons
  • 1/4 cup extra virgin olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp black pepper

Instructions

  1. Mash the garlic and anchovy fillets together in a large salad bowl using a fork until a smooth paste forms.
  2. Whisk in the olive oil and lemon juice until the dressing is emulsified and slightly thickened.
  3. Add the chopped romaine lettuce to the bowl and toss thoroughly to coat every leaf with the dressing over medium heat until heated through, about 5 min.
  4. Fold in half of the grated parmesan cheese and all the croutons, tossing gently to combine over medium heat until heated through, about 5 min.
  5. Serve immediately, topped with the remaining parmesan cheese and fresh cracked pepper until ready to serve.
