Ingredients
- 960g chicken breast, boneless and skinless, diced
- 450g pasta, dry
- 240g greek yogurt, plain non-fat
- 120g parmesan cheese, grated
- 240ml skim milk
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp olive oil
Instructions
- Boil a large pot of salted water and cook pasta according to package directions until al dente, about 8-10 minutes.
- Heat olive oil in a large skillet over medium-high heat and cook diced chicken until golden brown and cooked through, about 6-8 minutes.
- Reduce heat to low and add minced garlic to the skillet, sautéing for 1 minute until fragrant.
- Whisk together greek yogurt, milk, and parmesan cheese in a small bowl until smooth.
- Pour the yogurt mixture into the skillet with the chicken, stirring constantly over low heat for 2-3 minutes until thickened and heated through; do not let it boil to prevent curdling.
- Toss the cooked pasta into the sauce, coating thoroughly, and season with salt and pepper before serving
