Ingredients

  • 960g chicken breast, boneless and skinless, diced
  • 450g pasta, dry
  • 240g greek yogurt, plain non-fat
  • 120g parmesan cheese, grated
  • 240ml skim milk
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Boil a large pot of salted water and cook pasta according to package directions until al dente, about 8-10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat and cook diced chicken until golden brown and cooked through, about 6-8 minutes.
  3. Reduce heat to low and add minced garlic to the skillet, sautéing for 1 minute until fragrant.
  4. Whisk together greek yogurt, milk, and parmesan cheese in a small bowl until smooth.
  5. Pour the yogurt mixture into the skillet with the chicken, stirring constantly over low heat for 2-3 minutes until thickened and heated through; do not let it boil to prevent curdling.
  6. Toss the cooked pasta into the sauce, coating thoroughly, and season with salt and pepper before serving
