Seared chicken breast simmered in a light pesto cream sauce with fresh spinach and cherry tomatoes.

Ingredients

  • 2 chicken breasts (approx. 150g each)
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 100g cherry tomatoes, halved
  • 2 stalks green onion, thinly sliced
  • 2 cup fresh baby spinach
  • 2 tbsp pesto
  • 60ml low-fat cream
  • 1 cup cooked rice (for serving)

Instructions

  1. Season the chicken breasts evenly with paprika, oregano, salt, and pepper.
  2. Heat a non-stick pan over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown and cooked through.
  3. Remove chicken from the pan and set aside on a plate.
  4. Add the cherry tomatoes and green onion to the same pan, sautéing for 2-3 minutes until the tomatoes begin to soften.
  5. Stir in the spinach, pesto, and low-fat cream, cooking for 1-2 minutes until the spinach wilts and the sauce is incorporated.
  6. Return the chicken to the pan, coating it in the sauce, and simmer for 2 minutes to reheat.
  7. Serve immediately over a bed of cooked rice.
