Creamy Pesto Chicken by Hlthguru

Seared chicken breast simmered in a light pesto cream sauce with fresh spinach and cherry tomatoes.

Ingredients
- 2 chicken breasts (approx. 150g each)
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 100g cherry tomatoes, halved
- 2 stalks green onion, thinly sliced
- 2 cup fresh baby spinach
- 2 tbsp pesto
- 60ml low-fat cream
- 1 cup cooked rice (for serving)
Instructions
- Season the chicken breasts evenly with paprika, oregano, salt, and pepper.
- Heat a non-stick pan over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown and cooked through.
- Remove chicken from the pan and set aside on a plate.
- Add the cherry tomatoes and green onion to the same pan, sautéing for 2-3 minutes until the tomatoes begin to soften.
- Stir in the spinach, pesto, and low-fat cream, cooking for 1-2 minutes until the spinach wilts and the sauce is incorporated.
- Return the chicken to the pan, coating it in the sauce, and simmer for 2 minutes to reheat.
- Serve immediately over a bed of cooked rice.
