Easy Mashed Potatoes with yukon gold potatoes salt and milk finished with fresh herbs and citrus.

Ingredients

  • 2 lb yukon gold potatoes
  • 1 tsp salt
  • 0.5 cup milk
  • 4 tbsp butter
  • 0.25 tsp grated nutmeg
  • 0.5 cup grated parmesan cheese
  • 1 tbsp chives

Instructions

  1. Peel potatoes and chop into large, equal-sized chunks.
  2. Place potatoes in a pot, cover with cold water, and add salt.
  3. Bring water to a boil, then reduce heat and simmer for 30 minutes, or until fork-tender.
  4. Drain potatoes and let them cool for 5 minutes to allow steam to escape.
  5. Mash the potatoes using a potato ricer, masher, or rotary masher.
  6. Add butter, milk, salt, and optional nutmeg to the mashed potatoes.
  7. Turn heat to medium-low and stir with a whisk until well combined, about 5 minutes.
  8. Once hot and creamy, turn off heat and stir in grated parmesan cheese until melted.
  9. Transfer mashed potatoes to a serving bowl, swirl the top, and garnish with butter and chives.
