Easy Mashed Potatoes with yukon gold potatoes salt and milk finished with fresh herbs and citrus.

Ingredients
- 2 lb yukon gold potatoes
- 1 tsp salt
- 0.5 cup milk
- 4 tbsp butter
- 0.25 tsp grated nutmeg
- 0.5 cup grated parmesan cheese
- 1 tbsp chives
Instructions
- Peel potatoes and chop into large, equal-sized chunks.
- Place potatoes in a pot, cover with cold water, and add salt.
- Bring water to a boil, then reduce heat and simmer for 30 minutes, or until fork-tender.
- Drain potatoes and let them cool for 5 minutes to allow steam to escape.
- Mash the potatoes using a potato ricer, masher, or rotary masher.
- Add butter, milk, salt, and optional nutmeg to the mashed potatoes.
- Turn heat to medium-low and stir with a whisk until well combined, about 5 minutes.
- Once hot and creamy, turn off heat and stir in grated parmesan cheese until melted.
- Transfer mashed potatoes to a serving bowl, swirl the top, and garnish with butter and chives.
