- Preheat oven to 325°F (165°C). Pour beaten eggs into a greased baking sheet and bake until just set, approximately 10-12 minutes.
- Cook sausage patties in a skillet over medium heat until browned and cooked through, about 5-6 minutes.
- Cut the baked eggs, sausage, and cheese into 2.5-inch circles to fit your sandwich sealer.
- Assemble sandwiches by placing a slice of bread, a layer of sausage, cheese, and egg, then a second slice of bread; press firmly with a sandwich sealer to crimp the edges.
- Prepare pancake batter according to package directions, ensuring a thin consistency for a light coating.
- Dip each sealed sandwich quickly into the pancake batter, shaking off excess.
- Melt butter in a skillet over medium heat and cook sandwiches for 2-3 minutes per side until golden brown and crispy.
- Serve immediately with a drizzle of maple syrup.
