- 3 large ripe bananas, mashed
- 1/2 cup strong brewed coffee, cooled
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs, lightly beaten
- 1 tsp vanilla extract
- 1 3/4 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Whisk the melted butter and sugar in a large bowl until smooth, then stir in the eggs and vanilla.
- Fold in the mashed bananas and the cooled brewed coffee until well combined.
- Sift the flour, baking soda, and salt into the wet mixture, stirring gently until just combined; do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
