  • 3 large ripe bananas, mashed
  • 1/2 cup strong brewed coffee, cooled
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Whisk the melted butter and sugar in a large bowl until smooth, then stir in the eggs and vanilla.
  3. Fold in the mashed bananas and the cooled brewed coffee until well combined.
  4. Sift the flour, baking soda, and salt into the wet mixture, stirring gently until just combined; do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
