Homemade German Spätzle by Hermann

Easy recipe for authentic German Spätzle with caramelized onions and Gruyere cheese.

Ingredients

  • 300 g all-purpose flour
  • 100 g semolina flour
  • 4 eggs
  • 1 tsp salt
  • 150 ml water
  • 2 onions
  • 2 tbsp butter
  • 1 tbsp oil
  • 100 ml cooking water
  • 100 g gruyere cheese
  • 1 nutmeg

Instructions

  1. In a bowl, mix together all-purpose flour and semolina flour
  2. Add eggs, salt, and water to the flour mixture.
  3. Mix until the batter forms pretzel bubbles.
  4. Bring salted water to a boil in a pot
  5. Cook Spätzle in boiling water until they float, then remove.
  6. Slice onions and fry in butter and oil for about 20 minutes until golden brown.
  7. Add cooked Spätzle to a pan with 100 ml cooking water, 100 g Gruyere cheese, and two-thirds of the fried onions.
  8. Serve topped with remaining onions, grated cheese, and a grating of nutmeg.
