Homemade German Spätzle by Hermann

Easy recipe for authentic German Spätzle with caramelized onions and Gruyere cheese.

Ingredients
- 300 g all-purpose flour
- 100 g semolina flour
- 4 eggs
- 1 tsp salt
- 150 ml water
- 2 onions
- 2 tbsp butter
- 1 tbsp oil
- 100 ml cooking water
- 100 g gruyere cheese
- 1 nutmeg
Instructions
- In a bowl, mix together all-purpose flour and semolina flour
- Add eggs, salt, and water to the flour mixture.
- Mix until the batter forms pretzel bubbles.
- Bring salted water to a boil in a pot
- Cook Spätzle in boiling water until they float, then remove.
- Slice onions and fry in butter and oil for about 20 minutes until golden brown.
- Add cooked Spätzle to a pan with 100 ml cooking water, 100 g Gruyere cheese, and two-thirds of the fried onions.
- Serve topped with remaining onions, grated cheese, and a grating of nutmeg.
