Fluffy, protein-packed pancake batter baked into individual bowls and topped with fresh, juicy blueberries.

Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/2 cup egg whites
  • 1/2 cup unsweetened almond milk
  • 1/2 cup fresh blueberries
  • 1 tbsp maple syrup (optional topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease two oven-safe ramekins or small bowls.
  2. Whisk together the oat flour, protein powder, and baking powder in a medium mixing bowl until well combined.
  3. Stir in the egg whites and almond milk until a smooth batter forms.
  4. Fold in half of the blueberries gently into the batter
  5. Pour the mixture evenly into the prepared bowls and top with the remaining blueberries.
  6. Bake for 18-20 minutes, or until the centers are set and a toothpick inserted comes out clean.
