- 1 cup oat flour
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- 1/2 cup egg whites
- 1/2 cup unsweetened almond milk
- 1/2 cup fresh blueberries
- 1 tbsp maple syrup (optional topping)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease two oven-safe ramekins or small bowls.
- Whisk together the oat flour, protein powder, and baking powder in a medium mixing bowl until well combined.
- Stir in the egg whites and almond milk until a smooth batter forms.
- Fold in half of the blueberries gently into the batter
- Pour the mixture evenly into the prepared bowls and top with the remaining blueberries.
- Bake for 18-20 minutes, or until the centers are set and a toothpick inserted comes out clean.
