Spicy Raw Marinated Crab by Haydokim

Fresh raw crab marinated in a bold, spicy soy-based sauce with traditional Korean aromatics.

Ingredients
- 4 large blue crabs, cleaned and quartered
- 1/2 cup soju (for soaking)
- 3/4 cup soy sauce
- 1/4 cup gochugaru (korean chili flakes)
- 2 tbsp honey or corn syrup
- 1 tbsp minced garlic
- 1 tsp minced ginger
- 1 green onion, thinly sliced
Instructions
- Clean the crabs thoroughly, remove the gills and shells, and cut into quarters until ready to serve.
- Soak the crab pieces in soju for 5 minutes to neutralize any fishy odor, then drain well.
- Whisk together the soy sauce, gochugaru, honey, garlic, ginger, and green onion in a large bowl to create the marinade over medium heat until heated through, about 5 min.
- Add the crab pieces to the marinade and toss until evenly coated.
- Transfer to an airtight container and refrigerate for at least 4 hours, or up to 24 hours, before serving.
