Spicy Raw Marinated Crab by Haydokim

Fresh raw crab marinated in a bold, spicy soy-based sauce with traditional Korean aromatics.

Ingredients

  • 4 large blue crabs, cleaned and quartered
  • 1/2 cup soju (for soaking)
  • 3/4 cup soy sauce
  • 1/4 cup gochugaru (korean chili flakes)
  • 2 tbsp honey or corn syrup
  • 1 tbsp minced garlic
  • 1 tsp minced ginger
  • 1 green onion, thinly sliced

Instructions

  1. Clean the crabs thoroughly, remove the gills and shells, and cut into quarters until ready to serve.
  2. Soak the crab pieces in soju for 5 minutes to neutralize any fishy odor, then drain well.
  3. Whisk together the soy sauce, gochugaru, honey, garlic, ginger, and green onion in a large bowl to create the marinade over medium heat until heated through, about 5 min.
  4. Add the crab pieces to the marinade and toss until evenly coated.
  5. Transfer to an airtight container and refrigerate for at least 4 hours, or up to 24 hours, before serving.
