Easy Vegan Puff Pastry Dough by Harper Health Az
simple, gluten-free, and vegan-friendly puff pastry dough perfect for biscuits, danishes, and savory pies.

Ingredients
- 3 cups gluten-free flour
- 3/4 teaspoon salt
- 3/4 teaspoon baking soda
- 2 sticks (16 tablespoons) vegan butter, melted
- 1/2 cup water
- additional gluten-free flour, for dusting
Instructions
- In a large bowl, whisk together the 3 cups of gluten-free flour, 3/4 teaspoon salt, and 3/4 teaspoon baking soda until well combined.
- Melt the 2 sticks (16 tablespoons) of vegan butter in a microwave-safe bowl. This should take about 20-30 seconds per stick. Be careful not to overheat.
- Gradually pour the melted vegan butter into the dry ingredients while whisking or mixing with a spatula until mostly incorporated. The mixture will be clumpy.
- Turn the clumpy dough mixture out onto a clean counter or a lightly floured surface. Add about half of the 1/2 cup of water and begin to incorporate it into the dough using your hands, a bench scraper, or a knife.
- Continue to slowly add the remaining water, a little at a time, mixing until the dough just begins to come together. The dough should be clumpy and not very cohesive at this stage.
- Gently gather the dough into a rough ball. Place the dough ball on a piece of parchment paper or a plate, and chill in the refrigerator for 20 minutes.
- After chilling, place the dough ball on a lightly floured surface. Use a rolling pin to flatten it into a rectangle shape. If the dough is sticky, add a little more gluten-free flour to the surface and your hands.
- Perform a 'letter fold': Fold one-third of the dough over the middle, then fold the remaining third over that, like folding a letter. Gently press to seal.
- Roll the folded dough into another rectangle, then repeat the letter fold. Roll into a ball and wrap tightly in plastic wrap or place in an airtight container.
- Chill the dough in the refrigerator for at least 20 minutes before using. The dough can be stored in the refrigerator for up to 2 days.
- When ready to bake: Shape the puff pastry into your desired form (biscuits, danishes, pies, etc.). Cover the shaped pastries and let them rise in a warm place for 15-30 minutes.
- Preheat your oven to 400°F (200°C).
- Bake the pastries in the preheated oven for 10-20 minutes, or until golden brown and puffed. Cooking time will vary based on the thickness of your pastry.
