Cheesy Rice Paper Tteokbokki by Haileyateit

Chewy rice paper rolls stuffed with melted cheese and simmered in a spicy, sweet gochujang sauce.

Ingredients

  • 12 sheets rice paper
  • 6 sticks string cheese, cut into halves
  • 2 tbsp gochujang (korean chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp sesame oil
  • 1 cup water
  • 1 tbsp vegetable oil

Instructions

  1. Dip each sheet of rice paper in warm water for 5 seconds until pliable, then lay flat on a clean surface.
  2. Place a piece of string cheese in the center of the rice paper and roll it tightly into a cylindrical shape until ready to serve.
  3. Repeat until all cheese sticks are wrapped, then set aside.
  4. Heat vegetable oil in a pan over medium heat and sear the rice paper rolls for 2-3 minutes until lightly golden and crispy.
  5. Whisk together gochujang, soy sauce, sugar, and water in a small bowl to create the sauce over medium heat until heated through, about 5 min.
  6. Pour the sauce into the pan with the rolls and simmer for 3-5 minutes until the sauce thickens and coats the rolls.
  7. Drizzle with sesame oil before serving immediately while the cheese is melted until ready to serve.
