Simple Silken Tofu, Egg, and Prawns by Guytruong

Steamed silken tofu and eggs topped with fresh prawns and a drizzle of spicy chili oil.

Ingredients
- 1 block silken tofu
- 3 eggs
- 150 g fresh prawns
- 0.25 tsp salt
- 0.25 tsp white pepper
- 2 tbsp vegetable oil
- 1 tbsp laoganma chili oil
Instructions
- Heat 2 tbsp of oil in a non-stick pan over low heat.
- Place the silken tofu into the pan, breaking it slightly if desired.
- Whisk the eggs with salt and white pepper, then pour the mixture over the tofu
- Arrange the fresh prawns evenly on top of the egg and tofu mixture.
- Cover the pan with a lid and cook on low heat for 10 minutes, or until the eggs are fully set and the prawns are opaque.
- Remove from heat and drizzle with Laoganma or Chiu Chow chili oil before serving.
