Simple Silken Tofu, Egg, and Prawns by Guytruong

Steamed silken tofu and eggs topped with fresh prawns and a drizzle of spicy chili oil.

Ingredients

  • 1 block silken tofu
  • 3 eggs
  • 150 g fresh prawns
  • 0.25 tsp salt
  • 0.25 tsp white pepper
  • 2 tbsp vegetable oil
  • 1 tbsp laoganma chili oil

Instructions

  1. Heat 2 tbsp of oil in a non-stick pan over low heat.
  2. Place the silken tofu into the pan, breaking it slightly if desired.
  3. Whisk the eggs with salt and white pepper, then pour the mixture over the tofu
  4. Arrange the fresh prawns evenly on top of the egg and tofu mixture.
  5. Cover the pan with a lid and cook on low heat for 10 minutes, or until the eggs are fully set and the prawns are opaque.
  6. Remove from heat and drizzle with Laoganma or Chiu Chow chili oil before serving.
