Slow-cooked tender mutton marinated in yogurt and aromatic spices, steam-finished for a deep, concentrated flavor.

Ingredients
- 1 kg (2.2 lbs) mutton, cut into medium pieces
- 1 cup thick yogurt, whisked
- 2 tbsp ginger-garlic paste
- 1 cup browned onions (birista), crushed
- 1 tbsp red chili powder
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp garam masala powder
- 1/2 cup oil or ghee
- 1/2 cup fresh cilantro and mint, chopped
- 1 tsp salt (adjust to taste)
Instructions
- Combine the mutton, yogurt, ginger-garlic paste, red chili powder, turmeric, coriander powder, garam masala, salt, and half the crushed onions in a large bowl until ready to serve.
- Mix thoroughly to coat the meat and let it marinate for at least 1 hour in the refrigerator.
- Heat the oil or ghee in a heavy-bottomed pot over medium heat and add the marinated meat.
- Sauté the meat for 8-10 minutes until the color changes and it begins to sear.
- Add 1/2 cup of water, cover the pot tightly, and reduce the heat to low until ready to serve.
- Simmer for 45-50 minutes, checking occasionally, until the meat is tender and the oil separates.
- Garnish with the remaining crushed onions, fresh cilantro, and mint before serving until ready to serve.
