Ingredients

  • 1 lb beef fillet
  • 2 tbsp oil
  • 2 tbsp butter
  • 2 oz truffle
  • 1 cup chopped mushrooms
  • 1/4 cup chopped parsley
  • 1 egg, for egg wash
  • 1 sheet puff pastry

Instructions

  1. Sear the beef fillet in a pan with oil and butter until browned on all sides, about 2-3 minutes per side, basting with the butter.
  2. Prepare the duxelles by caramelizing chopped mushrooms in the same pan, then hand-chopping them finely and adding truffle.
  3. Make parsley pancakes by combining chopped parsley with pancake batter and cooking thinly.
  4. Spread the duxelles evenly onto a sheet of plastic wrap or parchment paper, creating a border.
  5. Place the seared beef fillet onto the duxelles.
  6. Gently roll the beef in the duxelles using the plastic wrap/parchment to create an even layer.
  7. Lay a parsley pancake over the duxelles-wrapped beef.
  8. Wrap the entire assembly tightly in puff pastry, ensuring an even layer.
  9. Lightly egg wash the pastry.
  10. Score the pastry and bake in a preheated oven at 400°F (200°C) for 30-35 minutes, or until golden brown and cooked through.
  11. Let rest for 10 minutes before slicing.
