Fragrant pineapple fried rice topped with sweet snow crab and a zesty lemon-dill butter sauce.

Ingredients
- 1 whole pineapple, halved and hollowed
- 2 cup cooked jasmine rice
- 1 cup snow crab meat, cooked and shelled
- 1/2 cup pineapple chunks (from hollowed fruit)
- 1/4 cup unsalted butter
- 2 tbsp fresh lemon juice
- 1 tbsp fresh dill, chopped
- 1 tsp garlic powder
- 1/2 tsp salt (adjust to taste)
Instructions
- Hollow out the pineapple halves, reserving 1/2 cup of the fruit chunks for the rice.
- Melt 1 tablespoon of butter in a pan over medium heat, add the rice and pineapple chunks, and sauté for 5 minutes until heated through.
- Prepare the sauce by melting the remaining butter in a small saucepan over low heat, then whisk in lemon juice, dill, garlic powder, and salt for 2 minutes.
- Fill the pineapple bowls with the fried rice mixture.
- Top the rice with the snow crab meat and drizzle generously with the prepared lemon-dill butter sauce before serving.
