Stir-Fried Beef With Ginger by Good Food

Tender strips of marinated beef stir-fried with fragrant ginger, lemongrass, and crisp green peppers.

Ingredients
- 350g lean beef, thinly sliced against the grain
- 1 lemongrass stalk, trimmed and finely chopped
- 1 tbsp soy sauce
- 2 tbsp fish sauce
- 4 tsp brown sugar
- 1/2 tsp chili flakes
- 1 lime, juiced
- 3 tbsp vegetable oil
- 1 green pepper, thinly sliced
- 2 bunches green onion, white and green parts separated and finely sliced
- 6 garlic cloves, finely chopped
- 1 tbsp ginger, grated
- 1 small bunch basil leaves, roughly chopped
- 50g roasted peanuts, roughly chopped
Instructions
- Toss the beef strips, lemongrass, soy sauce, half the fish sauce, half the sugar, and half the chilli flakes in a bowl; marinate in the fridge for at least 20 minutes.
- Whisk the remaining fish sauce, lime juice, remaining chilli flakes, remaining sugar, and 3 tbsp water in a small bowl and set aside.
- Heat 1 tbsp oil in a wok over high heat; stir-fry half the beef for 2 minutes until cooked through, remove to a plate, and repeat with another 1 tbsp oil and the remaining beef.
- Wipe the wok clean, add the remaining 1 tbsp oil, and stir-fry the green pepper and white parts of the spring onions for 2-3 minutes.
- Add the garlic and ginger to the wok and stir-fry for 45-60 seconds until fragrant.
- Return the cooked beef to the wok, add the lime dressing and most of the basil, and toss well to coat for 1 minute.
- Serve immediately, garnished with the peanuts, remaining basil, and green parts of the spring onions.
