Gluten-Free Banana Bread by Good Food

Moist, gluten-free loaf featuring ripe bananas, ground almonds, and a warm hint of cinnamon.

Ingredients

  • 5 small ripe bananas (4 mashed, 1 halved lengthwise)
  • 150g gluten-free self-raising flour
  • 100g gluten-free oats
  • 50g ground almonds
  • 1 tsp gluten-free baking powder
  • 1 tsp ground cinnamon
  • 90g dark brown soft sugar
  • 90g caster sugar (plus 1 tbsp extra for sprinkling)
  • 100g butter, melted
  • 2 eggs, beaten
  • 1 tbsp icing sugar

Instructions

  1. Heat the oven to 180C/160C fan/gas 4 and line a 900g loaf tin with baking parchment.
  2. Combine the mashed bananas, flour, oats, almonds, baking powder, cinnamon, brown sugar, 90g caster sugar, melted butter, and eggs in a large bowl, stirring until smooth.
  3. Pour the batter into the prepared loaf tin.
  4. Place the two banana halves cut-side up on top of the batter, pressing down slightly.
  5. Sprinkle the remaining 1 tbsp caster sugar over the top.
  6. Bake for 1 hr to 1 hr 15 mins until a skewer inserted into the center comes out clean, covering with foil if the top browns too quickly.
  7. Dust with icing sugar once cooled.
