Gluten-Free Banana Bread by Good Food

Moist, gluten-free loaf featuring ripe bananas, ground almonds, and a warm hint of cinnamon.

Ingredients
- 5 small ripe bananas (4 mashed, 1 halved lengthwise)
- 150g gluten-free self-raising flour
- 100g gluten-free oats
- 50g ground almonds
- 1 tsp gluten-free baking powder
- 1 tsp ground cinnamon
- 90g dark brown soft sugar
- 90g caster sugar (plus 1 tbsp extra for sprinkling)
- 100g butter, melted
- 2 eggs, beaten
- 1 tbsp icing sugar
Instructions
- Heat the oven to 180C/160C fan/gas 4 and line a 900g loaf tin with baking parchment.
- Combine the mashed bananas, flour, oats, almonds, baking powder, cinnamon, brown sugar, 90g caster sugar, melted butter, and eggs in a large bowl, stirring until smooth.
- Pour the batter into the prepared loaf tin.
- Place the two banana halves cut-side up on top of the batter, pressing down slightly.
- Sprinkle the remaining 1 tbsp caster sugar over the top.
- Bake for 1 hr to 1 hr 15 mins until a skewer inserted into the center comes out clean, covering with foil if the top browns too quickly.
- Dust with icing sugar once cooled.
