Chicken Fajitas by Good Food

Tender strips of seasoned chicken and charred peppers served in warm tortillas with fresh, vibrant salsa.

Ingredients

  • 2 chicken breasts, finely sliced
  • 1 red onion, finely sliced
  • 1 red pepper, sliced
  • 1 red chili, finely sliced (optional)
  • 1 tbsp smoked paprika
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 2 garlic cloves, crushed
  • 4 tbsp olive oil
  • 1 lime, juiced
  • 5 drops tabasco sauce
  • 8 tortillas
  • 100g mixed salad leaves
  • 230g fresh salsa
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)

Instructions

  1. Heat oven to 200C/180C fan/gas 6 and wrap 8 tortillas in foil to keep them warm.
  2. Whisk together smoked paprika, ground coriander, cumin, crushed garlic, olive oil, lime juice, Tabasco, salt, and pepper in a bowl to create the marinade.
  3. Add the sliced chicken, red onion, red pepper, and chili to the marinade and stir until well coated.
  4. Heat a griddle pan over high heat until smoking hot.
  5. Add the chicken mixture to the pan and cook for about 5 minutes, tossing constantly until the chicken is charred and cooked through.
  6. Place the foil-wrapped tortillas in the oven for 5 minutes while the chicken finishes.
  7. Check that the thickest part of the chicken is opaque and cooked through before serving with the tortillas, salad, and salsa.
