Basa Fillet with Garlic, Spring Onion & Paprika Butter by Good Food

Pan-fried basa fillets served with a rich, aromatic garlic, spring onion, and smoked paprika butter sauce.

Ingredients

  • 2 Basa fillets (approx. 250g total)
  • 50g Salted butter
  • 3 Spring onions, finely sliced
  • 2 Garlic cloves, grated
  • 1 tbsp Olive oil
  • 2 tbsp Plain flour
  • 1 tsp Smoked sweet paprika
  • to taste Salt
  • to taste Black pepper, freshly ground

Instructions

  1. Prepare the basa fillets by seasoning them generously with salt and pepper on both sides. Place the plain flour on a shallow plate. Lightly coat each basa fillet in the flour, shaking off any excess to ensure a thin, even layer.
  2. Heat the olive oil in a large frying pan over medium heat until shimmering. Carefully lower the floured basa fillets into the hot oil. Cook for 2-3 minutes on each side until the fish is lightly golden brown and flakes easily when gently pressed with a fork.
  3. Once cooked, transfer the basa fillets to a plate lined with kitchen paper to drain any excess oil. Set aside and keep warm.
  4. Return the same frying pan to medium heat. Add the butter and melt until it is foaming. Stir in the finely sliced spring onions and grated garlic, along with a small pinch of salt and a good few twists of black pepper. Sauté for 1-2 minutes until the spring onions soften slightly and the garlic becomes fragrant.
  5. Stir in the smoked sweet paprika and cook for an additional 30 seconds, stirring consistently, to toast the spice and deepen its flavor. Ensure the paprika doesn't burn.
  6. Pour the warm garlic, spring onion, and paprika butter sauce directly over the cooked basa fillets. Serve immediately with your choice of cooked rice or potatoes and fresh vegetables, such as tenderstem broccoli.
