Wild Asparagus and Sausage Pasta by Glutenfreezone
Tender wild asparagus and savory crumbled sausage tossed with gluten-free pasta in a light sauce.

Ingredients
- 200g (7 oz) gluten-free pasta
- 150g (5 oz) wild asparagus, trimmed and chopped
- 150g (5 oz) italian sausage, casings removed
- 1 tbsp extra virgin olive oil
- 1 small shallot, finely minced
- 1/2 tsp sea salt (adjust to taste)
- 1/4 cup pasta cooking water
Instructions
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package directions until al dente.
- Heat olive oil in a large skillet over medium heat and add the minced shallot, sautéing for 2 minutes until translucent.
- Add the crumbled sausage to the skillet and cook for 5-6 minutes until browned and cooked through.
- Stir in the chopped wild asparagus and cook for 3-4 minutes until tender but still vibrant green.
- Drain the pasta, reserving 1/4 cup of the cooking water, and add the pasta directly to the skillet over medium heat until heated through, about 5 min.
- Toss everything together over low heat, adding the reserved pasta water to emulsify the sauce, and serve immediately.
