Mom's Favorite Roasted Salmon with Romesco Sauce by Girlfromcalifornia

Roasted salmon fillets served with a smooth sauce of roasted bell peppers and toasted almonds.

Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 cup roasted bell peppers, jarred or fresh
  • 0.5 cup almonds, blanched
  • 0.25 cup sun-dried tomatoes
  • 1 clove garlic
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place salmon fillets on a parchment-lined baking sheet, season with salt and pepper, and roast for 12-15 minutes until opaque and flaky.
  3. While salmon roasts, add roasted peppers, almonds, sun-dried tomatoes, garlic, olive oil, vinegar, and paprika into a high-speed blender.
  4. Blend on high speed for 30-60 seconds until the sauce reaches a smooth, consistent texture.
  5. Taste and adjust seasoning with additional salt or vinegar if needed.
  6. Serve the warm salmon topped generously with the romesco sauce.
