Mom's Favorite Roasted Salmon with Romesco Sauce by Girlfromcalifornia

Roasted salmon fillets served with a smooth sauce of roasted bell peppers and toasted almonds.

Ingredients
- 2 salmon fillets (6 oz each)
- 1 cup roasted bell peppers, jarred or fresh
- 0.5 cup almonds, blanched
- 0.25 cup sun-dried tomatoes
- 1 clove garlic
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 0.5 tsp smoked paprika
- 0.25 tsp salt
Instructions
- Preheat your oven to 400°F (200°C).
- Place salmon fillets on a parchment-lined baking sheet, season with salt and pepper, and roast for 12-15 minutes until opaque and flaky.
- While salmon roasts, add roasted peppers, almonds, sun-dried tomatoes, garlic, olive oil, vinegar, and paprika into a high-speed blender.
- Blend on high speed for 30-60 seconds until the sauce reaches a smooth, consistent texture.
- Taste and adjust seasoning with additional salt or vinegar if needed.
- Serve the warm salmon topped generously with the romesco sauce.
