Flavorful Japanese-style chicken meatballs glazed in a savory-sweet sauce, perfect for meal prep bento boxes.

Ingredients

  • 1 lb ground chicken
  • 0.5 cup green onion, finely chopped
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, green onions, ginger, 1 tbsp soy sauce, sesame oil, and cornstarch. Mix until well combined.
  3. Shape the mixture into 12-16 small, oblong meatballs and place them on the prepared baking sheet.
  4. Bake for 15-18 minutes until the meatballs are cooked through and slightly golden.
  5. While baking, whisk together the remaining 2 tbsp soy sauce, mirin, and sugar in a small saucepan over medium heat.
  6. Simmer the sauce for 3-5 minutes until it thickens into a glaze consistency.
  7. Brush the glaze generously over the baked meatballs and serve warm.
