Flavorful Japanese-style chicken meatballs glazed in a savory-sweet sauce, perfect for meal prep bento boxes.

Ingredients
- 1 lb ground chicken
- 0.5 cup green onion, finely chopped
- 1 tbsp fresh ginger, grated
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, green onions, ginger, 1 tbsp soy sauce, sesame oil, and cornstarch. Mix until well combined.
- Shape the mixture into 12-16 small, oblong meatballs and place them on the prepared baking sheet.
- Bake for 15-18 minutes until the meatballs are cooked through and slightly golden.
- While baking, whisk together the remaining 2 tbsp soy sauce, mirin, and sugar in a small saucepan over medium heat.
- Simmer the sauce for 3-5 minutes until it thickens into a glaze consistency.
- Brush the glaze generously over the baked meatballs and serve warm.
