Ingredients
- 1 lb chicken breasts, cut into 1-inch pieces
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/4 tsp crushed red pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cloves garlic, minced
- 1/2 cup tomatoes, chopped
- 2 cups broccoli florets
- 2 cups baby spinach
- 1/2 cup shredded mozzarella or cheddar cheese
- 4 oz cream cheese
Instructions
- Heat the olive oil in a large saucepan over medium-high heat, then add the chicken and season with Italian seasoning, crushed red pepper, salt, and pepper. Cook for 4-5 minutes, stirring occasionally, until golden and cooked through.
- Add the garlic and cook for 1 minute, stirring constantly, until fragrant.
- Add the tomatoes, broccoli, spinach, shredded cheese, and cream cheese, then cook for 3-4 minutes, stirring gently, until the broccoli is tender and the sauce is creamy and melted.
- Serve immediately while hot, with zucchini noodles, cauliflower rice, pasta, or rice if desired.
