Balsamic Braised Short Ribs by Gilliehouston
Tender bone-in beef short ribs slow-braised in a savory balsamic reduction with aromatic root vegetables.

Ingredients
- 4 bone-in beef short ribs
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 medium white onion, diced
- 3 medium carrots, peeled and diced
- 3 cloves garlic, minced
- 1/2 cup balsamic vinegar
- 2 cup beef broth
- 2 sprigs fresh thyme
Instructions
- Season the short ribs generously with salt and pepper on all sides until ready to serve.
- Heat the olive oil in a heavy-bottomed pot or Dutch oven over medium-high heat and sear the ribs until deeply browned, about 3-4 minutes per side, then remove and set aside.
- Add the diced onion and carrots to the same pot and sauté for 5-7 minutes until softened.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Deglaze the pot with balsamic vinegar, scraping up any browned bits from the bottom, and reduce by half over medium heat, about 5 minutes.
- Return the short ribs to the pot and pour in the beef broth until the ribs are mostly submerged.
- Add the thyme sprigs, cover with a tight-fitting lid, and simmer on low heat for 2.5 to 3 hours, or until the meat is fork-tender and falling off the bone.
