Greek Style Orzo by Gerbslikestocook
Simple, comforting Greek-style orzo with garlic, tomato, parsley, and feta.

Ingredients
- 1 1/2 cups dry orzo pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 cup chicken stock
- 1/4 cup chopped fresh parsley
- 1/2 cup crumbled feta cheese
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsp water, as needed to loosen the sauce
Instructions
- Bring a medium pot of salted water to a boil and cook the orzo for 8 to 10 minutes, until just tender; drain and set aside.
- Heat the olive oil in a skillet over medium heat for 1 minute, then add the garlic and cook for 30 seconds until fragrant.
- Stir in the tomato paste and cook for 1 to 2 minutes, until it darkens slightly and smells sweet.
- Pour in the chicken stock and simmer for 3 to 4 minutes, stirring, until the sauce loosens and thickens lightly.
- Add the cooked orzo to the skillet and toss for 1 to 2 minutes until evenly coated and heated through.
- Mix in the parsley, then top with feta and stir gently for 30 seconds until combined; serve warm.
