Ingredients

  • 1 1/2 cups dry orzo pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup chicken stock
  • 1/4 cup chopped fresh parsley
  • 1/2 cup crumbled feta cheese
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp water, as needed to loosen the sauce

Instructions

  1. Bring a medium pot of salted water to a boil and cook the orzo for 8 to 10 minutes, until just tender; drain and set aside.
  2. Heat the olive oil in a skillet over medium heat for 1 minute, then add the garlic and cook for 30 seconds until fragrant.
  3. Stir in the tomato paste and cook for 1 to 2 minutes, until it darkens slightly and smells sweet.
  4. Pour in the chicken stock and simmer for 3 to 4 minutes, stirring, until the sauce loosens and thickens lightly.
  5. Add the cooked orzo to the skillet and toss for 1 to 2 minutes until evenly coated and heated through.
  6. Mix in the parsley, then top with feta and stir gently for 30 seconds until combined; serve warm.
