Crispy Chilli Oil Garnish by Fowl Restaurant
Crispy Chilli Oil Garnish with garlic dried chillies and shallots finished with fresh herbs and citrus.

Ingredients
- 1 cup sliced garlic
- 1 cup dried chillies, sliced
- 1 cup shallots, sliced
- 1/2 cup gluten-free soy sauce
- 1 tbsp peppercorns
- 2 tbsp chili flakes
- 1 tsp msg
- 2 tbsp brown sugar
- 2 tbsp water
- 2 cup neutral oil (for frying)
Instructions
- Fry sliced garlic, chillies, and shallots in neutral oil over medium heat until golden and crispy, about 15-20 minutes.
- Strain the crispy aromatics, reserving the infused oil for the next step.
- In a heatproof bowl, combine gluten-free soy sauce, peppercorns, chilli flakes, and MSG.
- Gently pour the hot, reserved oil over the soy sauce mixture.
- In a small saucepan, whisk together brown sugar and water until dissolved.
- Add the dissolved sugar mixture to the oil and soy sauce mixture.
- Allow the mixture to cool for at least 2-3 hours for flavours to infuse.
- Once cooled, mix the crispy fried garlic, chillies, and shallots into the infused oil until evenly combined.
- Mix well and decant into jars for storage and service
