Crispy Chilli Oil Garnish by Fowl Restaurant

Crispy Chilli Oil Garnish with garlic dried chillies and shallots finished with fresh herbs and citrus.

Ingredients

  • 1 cup sliced garlic
  • 1 cup dried chillies, sliced
  • 1 cup shallots, sliced
  • 1/2 cup gluten-free soy sauce
  • 1 tbsp peppercorns
  • 2 tbsp chili flakes
  • 1 tsp msg
  • 2 tbsp brown sugar
  • 2 tbsp water
  • 2 cup neutral oil (for frying)

Instructions

  1. Fry sliced garlic, chillies, and shallots in neutral oil over medium heat until golden and crispy, about 15-20 minutes.
  2. Strain the crispy aromatics, reserving the infused oil for the next step.
  3. In a heatproof bowl, combine gluten-free soy sauce, peppercorns, chilli flakes, and MSG.
  4. Gently pour the hot, reserved oil over the soy sauce mixture.
  5. In a small saucepan, whisk together brown sugar and water until dissolved.
  6. Add the dissolved sugar mixture to the oil and soy sauce mixture.
  7. Allow the mixture to cool for at least 2-3 hours for flavours to infuse.
  8. Once cooled, mix the crispy fried garlic, chillies, and shallots into the infused oil until evenly combined.
  9. Mix well and decant into jars for storage and service
