Whipped Feta and Pistachio Dip by Foodmymuse

Creamy whipped feta dip topped with crunchy pistachios and a generous drizzle of olive oil.

Ingredients

  • 200g (7 oz) feta cheese, crumbled
  • 1/4 cup greek yogurt or cream cheese
  • 1 tbsp extra virgin olive oil (for the base)
  • 1/4 cup pistachios, shelled and roughly chopped
  • 2 tbsp extra virgin olive oil (for drizzling)
  • 1/2 tsp honey (optional, for balance)

Instructions

  1. Place the crumbled feta, yogurt or cream cheese, and 1 tablespoon of olive oil into a food processor.
  2. Process the mixture for 2-3 minutes, scraping down the sides as needed, until the texture is light and smooth.
  3. Transfer the whipped feta to a serving bowl and use a spoon to create a well in the center.
  4. Drizzle generously with the remaining extra virgin olive oil.
  5. Top with the chopped pistachios and serve immediately with pita bread or fresh vegetables.
