Crisp wood ear mushrooms tossed in a vibrant, aromatic dressing of black vinegar, chili, and garlic.

Ingredients

  • 2 cup wood ear mushrooms, blanched
  • 3 cloves garlic, minced
  • 2 thai chilies, sliced
  • 1/4 cup cilantro, chopped
  • 2 tbsp neutral oil, heated until smoking
  • 1 tbsp black vinegar
  • 1 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • 1/2 tbsp sugar
  • 1 tsp sichuan pepper powder
  • 1/2 tsp chili powder

Instructions

  1. Place the blanched wood ear mushrooms in a medium mixing bowl.
  2. Top the mushrooms with the minced garlic, sliced Thai chilies, chili powder, and Sichuan pepper powder.
  3. Heat the neutral oil in a small pan over high heat until smoking, then carefully pour it directly over the garlic and spices to release their aroma.
  4. Whisk in the black vinegar, soy sauce, sesame oil, and sugar until well combined.
  5. Toss in the fresh cilantro and serve immediately at room temperature or chilled.
