Crisp wood ear mushrooms tossed in a vibrant, aromatic dressing of black vinegar, chili, and garlic.

Ingredients
- 2 cup wood ear mushrooms, blanched
- 3 cloves garlic, minced
- 2 thai chilies, sliced
- 1/4 cup cilantro, chopped
- 2 tbsp neutral oil, heated until smoking
- 1 tbsp black vinegar
- 1 tbsp soy sauce
- 1/2 tbsp sesame oil
- 1/2 tbsp sugar
- 1 tsp sichuan pepper powder
- 1/2 tsp chili powder
Instructions
- Place the blanched wood ear mushrooms in a medium mixing bowl.
- Top the mushrooms with the minced garlic, sliced Thai chilies, chili powder, and Sichuan pepper powder.
- Heat the neutral oil in a small pan over high heat until smoking, then carefully pour it directly over the garlic and spices to release their aroma.
- Whisk in the black vinegar, soy sauce, sesame oil, and sugar until well combined.
- Toss in the fresh cilantro and serve immediately at room temperature or chilled.
