Sweet and Sour Gizzard Stir Fry by Foodiepaupau

Tender-crisp duck gizzards in a balanced sweet and sour glaze with aromatic ginger and onions.

Ingredients

  • 450g (1 lb) duck gizzards, fat trimmed and hatch-scored
  • 2 tbsp corn starch (for coating)
  • 2 tbsp vegetable oil
  • 1 tbsp ginger, minced
  • 1 medium onion, cut into wedges
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1/4 tsp white pepper
  • 2 tbsp brown sugar
  • 1 tbsp white sugar
  • 3 tbsp white vinegar
  • 1 tsp corn starch (for sauce thickening)
  • 1 stalk green onion, sliced (optional garnish)

Instructions

  1. Toss the cleaned, hatch-scored gizzards with 2 tablespoons of corn starch until lightly coated.
  2. Heat 1 tablespoon of oil in a wok or skillet over high heat; sear gizzards for 4-5 minutes until browned and cooked through, then remove from pan.
  3. Add remaining oil to the pan, then sauté ginger and onion wedges for 2-3 minutes until fragrant and softened.
  4. Whisk together oyster sauce, soy sauce, white pepper, sugars, vinegar, and 1 teaspoon of corn starch in a small bowl.
  5. Return the gizzards to the pan, pour in the sauce mixture, and toss constantly for 1-2 minutes until the sauce bubbles and thickens.
  6. Remove from heat and garnish with sliced green onions before serving.
