Sweet and Sour Gizzard Stir Fry by Foodiepaupau

Tender-crisp duck gizzards in a balanced sweet and sour glaze with aromatic ginger and onions.

Ingredients
- 450g (1 lb) duck gizzards, fat trimmed and hatch-scored
- 2 tbsp corn starch (for coating)
- 2 tbsp vegetable oil
- 1 tbsp ginger, minced
- 1 medium onion, cut into wedges
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1/4 tsp white pepper
- 2 tbsp brown sugar
- 1 tbsp white sugar
- 3 tbsp white vinegar
- 1 tsp corn starch (for sauce thickening)
- 1 stalk green onion, sliced (optional garnish)
Instructions
- Toss the cleaned, hatch-scored gizzards with 2 tablespoons of corn starch until lightly coated.
- Heat 1 tablespoon of oil in a wok or skillet over high heat; sear gizzards for 4-5 minutes until browned and cooked through, then remove from pan.
- Add remaining oil to the pan, then sauté ginger and onion wedges for 2-3 minutes until fragrant and softened.
- Whisk together oyster sauce, soy sauce, white pepper, sugars, vinegar, and 1 teaspoon of corn starch in a small bowl.
- Return the gizzards to the pan, pour in the sauce mixture, and toss constantly for 1-2 minutes until the sauce bubbles and thickens.
- Remove from heat and garnish with sliced green onions before serving.
