Silky jasmine rice porridge served warm with savory fermented tofu and a drizzle of soy sauce.

Ingredients
- 1 cup jasmine rice, rinsed
- 8 cup water or chicken stock
- 1 tsp salt
- 2 tbsp soy sauce (for serving)
- 2 cubes fermented tofu (for serving)
- 1 tbsp pig lard or sesame oil (for serving)
Instructions
- Combine rinsed rice, water or stock, and salt in a large heavy-bottomed pot.
- Bring the mixture to a boil over medium-high heat, then immediately reduce heat to low.
- Simmer partially covered for 60 to 90 minutes, stirring every 15 minutes to prevent sticking at the bottom.
- Cook until the rice grains have broken down completely and the texture is creamy and thickened.
- Ladle into bowls and serve warm with your choice of soy sauce, fermented tofu, or lard stirred in for flavor.
