Classic Chinese Congee by Foodiepaupau

Silky jasmine rice porridge served warm with savory fermented tofu and a drizzle of soy sauce.

Ingredients

  • 1 cup jasmine rice, rinsed
  • 8 cup water or chicken stock
  • 1 tsp salt
  • 2 tbsp soy sauce (for serving)
  • 2 cubes fermented tofu (for serving)
  • 1 tbsp pig lard or sesame oil (for serving)

Instructions

  1. Combine rinsed rice, water or stock, and salt in a large heavy-bottomed pot.
  2. Bring the mixture to a boil over medium-high heat, then immediately reduce heat to low.
  3. Simmer partially covered for 60 to 90 minutes, stirring every 15 minutes to prevent sticking at the bottom.
  4. Cook until the rice grains have broken down completely and the texture is creamy and thickened.
  5. Ladle into bowls and serve warm with your choice of soy sauce, fermented tofu, or lard stirred in for flavor.
