Chewy Medjool dates filled with a crunchy pistachio-kataifi cream, coated in a crisp dark chocolate shell.

Ingredients

  • 12 medjool dates, pitted and slit open
  • 50g (2 oz) kataifi pastry, finely chopped
  • 1 tbsp unsalted butter
  • 1/3 cup pistachio cream
  • 200g (7 oz) dark chocolate, chopped
  • 1/2 tsp coarse kosher salt

Instructions

  1. Melt butter in a pan over medium heat and add the chopped kataifi, cooking for 5-7 minutes until golden and crispy.
  2. Remove kataifi from heat and stir in the pistachio cream until well combined, creating a thick, crunchy paste.
  3. Prepare the dates by slitting them lengthwise and removing the pits, then carefully spoon the pistachio-kataifi mixture into the center of each date.
  4. Melt the chocolate in a microwave-safe bowl in 30-second intervals until smooth.
  5. Insert a skewer into each filled date and dip into the melted chocolate, shaking off excess.
  6. Place dates on a wire rack or parchment paper, sprinkle with coarse salt, and refrigerate for 15-20 minutes until the chocolate is set.
